Hovis fans in Canada seeking for the perfect recipe!
Readers of the Winnipeg Free Press have been reliving memories of their favourite baked good – Hovis!
Requests have been flooding in from Winnipeg residents to find out if they can purchase or recreate the popular Hovis bread that was sold in and around Canada in the 50’s and 60’s. With the bread no longer available in Winnipeg, two Hovis fans sent in the same recipe for a version they hoped would be similar to the loaf that was eaten decades ago. See recipe below.
We at Rank Hovis are not sure about the raw materials in this recipe! But it’s great to see we have Hovis fans across the globe.
Thankfully, through Rank Hovis you can buy Hovis Original Wheatgerm flour/bread mix and recreate that memorable Little Brown Loaf with ease….and without the need for Gravy Browner!
No-knead Hovis bread
500 ml (2 cups) milk
80 ml (1/3 cup) molasses
30 ml (2 tbsp) butter
10 ml (2 tsp) salt
1 ml (1/4 tsp) ground ginger
2 ml (1/2 tsp) gravy browner
250 ml (1 cup) natural bran (not cereal)
125 ml (1/2 cup) wheat germ
625 ml (2 1/2 cups) whole wheat flour
60 ml (1/4 cup) cocoa
2 pkgs instant yeast
500 ml (2 cups) whole wheat flour (approximately)
Scald milk in large saucepan. Pour into large bowl. Add molasses, butter, salt, ginger and gravy browner. Stir. Cool to lukewarm.
Add bran, wheat germ, first amount of whole wheat flour, cocoa and yeast. Mix. Work in enough remaining flour until dough pulls away from sides of bowl.
Place in greased bowl, turning once to grease top. Cover with greased waxed paper and tea towel. Let stand in oven with light on and door closed for about 1 1/2 hours until doubled in bulk.
Punch dough down. Divide in half. Shape into small loaves. Place in 2 greased 20 x 10 x 7.5 cm (8 x 4 x 3-inch) loaf pans. Cover with greased waxed paper and tea towel. Let stand in oven with light on and door closed for about 40 minutes until doubled in size.
Bake in 190 C (375 F) oven for 30 to 35 minutes. Turn out onto racks to cool.
