Soft White FlourRank Hovis has a well established range of technologically advanced, commercially functional steam treated flours. These flours have been designed for particular use as ingredients in the food manufacturing industry. Steam treated flours are produced from selected wheat varieties. The steam treatment process imparts specific functional characteristics which are not available from untreated flours, giving the following range of functional benefits:

  • Smooth, lump-free mixing with water.

  • High water uptake.

  • Consistent flow characteristics with no
    gluten separation eliminating pump and
    filter blockage.

  • No loss of viscosity during high speed
    mixing or pumping.

  • Consistent viscosity and ingredient pick up.

  • No enzyme activity therefore no loss of
    viscosity on standing.

  • No water separation on standing (no
    syneresis at ambient temperature).

  • Label declaration - ‘Wheat Flour’.

  • Significantly lower flour microbial load as
    compared to untreated flours.

 

Flours for thickening and binding

These flours are fully steam treated and are designed to be used as general purpose thickeners in soups, sauces and pie fillings, and
as binders/fillers in processed fish and meat products. All of these flours provide a viscous gel on cooking which is stable when cooled to ambient temperature.

Planet
Planet is manufactured for use in applications where easy mixing
to a smooth mobile slurry is required. Its inherent low cold paste
viscosity is appropriate for use in certain canning processes.
Planet is widely used in sauces and in various applications as
a binder.

Regent
Regent is a popular, widely used general-purpose thickener
and binder in the food processing industry.
Regent has the ability to absorb a large quantity of water at
ambient temperatures, which is retained on cooking.

Envoy
Envoy is a fully steam treated flour which produces slurries with
very high cold paste viscosities enabling Envoy to absorb a vast
quantity of water.
This feature can be used in food applications where extreme
water binding properties are required.

Viceroy
Viceroy is designed and manufactured by a unique multi-stage
process and is particularly suitable for thickening premium white
sauces and cream soups where whiteness and smooth mouth feel
are vital characteristics of the product.
Viceroy differs from all other fully steam treated flours by
additionally providing a guaranteed low cold paste viscosity.
This property, combined with its other features, makes it ideal
for use in canning processes where consistent mobility of the cold
sauce/soup is required.

Flours for coating

These flours are designed to make batters that will coat meat, fish and vegetables to provide a consistent viscosity and a strong adhesive base for breadcrumbs or other coating ingredients.

Consort
A lightly steam treated flour ideal for the manufacture of batters
and wafers. Consort is appropriate for use in applications
requiring a crisp product texture.

Courier
A lightly steam treated flour produced to a low cold paste
viscosity which mixes to a thin batter with smooth flow
characteristics. Courier can be used in single and multi-stage
batter systems which will adhere to fresh, chilled and frozen
products.

Ambassador
A medium steam treated flour produced to a medium cold paste
viscosity to acheive a lump free adhesive batter with controlled
pick up. Ambassador is waidely used in single stage and multistage
coating systems and has the strength to support crumb
materials and other coatings.

Diplomat
A heavily steam treated flour produced to a high cold paste
viscosity to achieve a lump free adhesive batter. The batter
produced provides a strong base enabling high density coatings to
be applied.
Senator
A very heavily steam treated flour produced to a very high cold
paste viscosity to achieve a lump free adhesive batter.
The batter produced enables a very high pick-up to be achieved
and provides a strong base enabling very high density coatings
to be applied.
Senator batters maintain low solids content giving a superior
finished product taste yet allows for a very high pick-up of
coating ingredients.
