Special Stronghold
A strong bakers flour, ideal for morning goods and oven bottom products. Milled from excellent quality breadmaking wheats, it is a strong flour capable of producing products with good volume and consistent in oven bottom and bulk ferment processes. Consistently performs in recipes that require a little more tolerance.

As You Like It
A patent bakers flour first milled in 1905, ideal for morning goods and tin bread where crumb colour is important. Milled from quality breadmaking wheats to a low extraction to ensure baked products have a white, bright crumb. As You Like It consistently performs best in bread, but also suitable for filo and puff pastry, as well as pizza dough.

Jade
Our strongest patent bakers flour, ideal for morning goods and oven bottom products where crumb colour is important. Milled from excellent quality breadmaking wheats to a very low extraction. Baked products have a whiter, brighter crumb than those from As You Like It and Leviathan. It consistently performs in bread with exceptionally good volume in oven bottom products.

Leviathan
A strong patent bakers flour that is suitable for morning goods and bloomers where crumb colour is important. Milled from quality breadmaking wheats to a low extraction to ensure baked products have a white, bright crumb. Higher protein than As You Like It and a consistent performance in bread and good volume on Bloomers.

Canada Best
Is a coarse brown flour, ideal for morning goods and tin bread. It is milled from specially identified wheats to give excellent tolerance and consistency every time.

Top Cobber
Top Cobber is a malted brown flour, produced by adding cut malted wheat and non-diastatic malt flour to a high-protein brown base flour. Suitable for use in all breadmaking processes and product types, the flour consistently gives products with a moist crumb and distinctive malted flavour.

Gold Crest
Is our 100% Wholemeal Flour that is perfect for morning goods and tin bread with outstanding final volume and tolerance throughout processes. Milled from specially identified wheat varieties to give a tolerant Wholemeal flour that performs without any surprises, again and again.
